Chicken Enchilada Salad Ingredients:
16 oz of pollo asado
1 can organic enchilada sauce
lettuce
tomato
avocado
green onion

Combine 16oz of pollo asado and 1 can of organic enchilada sauce in the crock pot on low for 8 hours (2 red and 1/2 green)Image may be NSFW.

Combine 1 cup of lettuce, 1/4 tomato, 1/4 avocado and 2 green onions and then add 4 oz of chopped cooked chicken and 1 TBS enchilada sauce on top of salad (2 green and 1 blue).
If you have a blue container left (or a kid who loves cheese, sour cream and avocado) you can shred monterey jack cheese and more avocado to add to the salad (add one or all three in one blue container).
